  • Ingredients

    • Kosher or fine sea salt
    • 1 (12-ounce) box Sam Mills gluten free corn and rice penne
    • 2 tablespoons olive oil
    • 1 (15-ounce) can quartered artichoke hearts, drained and patted dry
    • 6 tablespoons butter
    • 1 shallot minced
    • 2 cloves garlic minced
    • 2 lemons zest finely grated and juiced
    • 2 tablespoons capers
    • ½ cup chopped Italian parsley
    • ½ cup grated Parmesan cheese
    • Black pepper
  • How to prepare

    Bring a large pot of heavily salted water to a boil. Cook the penne according to the package directions. Drain the pasta, reserving some of the cooking water.

    While the pasta is cooking, make the sauce. Heat the olive oil over medium-high heat in a large skillet. Add the artichoke hearts in a single layer and let cook, undisturbed, for 3 minutes or until browned on one side. Flip them over and cook for another 3 minutes. Remove the artichoke hearts from the pan and lower the heat to medium. Add the butter and shallot and cook until the shallots are tender, and the butter is beginning to brown, about 5 minutes. Add the garlic, lemon zest, lemon juice, and capers. Cook, stirring, until the sauce begins to thicken slightly.

    Add the pasta and reserved artichoke hearts to the pan and cook for a minute, stirring until the pasta is coated with the sauce. If the sauce seems too dry, add a little of the reserved cooking water, 1 tablespoon at a time. Add the parsley and Parmesan cheese, stir and taste. Season to taste with salt and pepper. Serve immediately.

  • Ingredients

    • Kosher or fine sea salt
    • 12 ounces Sam Mills gluten free corn and rice penne
    • 7 tablespoons olive oil, divided
    • 3 tablespoons fresh lemon juice
    • 1 small clove garlic, grated or minced
    • ¾ teaspoon dried oregano
    • Freshly ground black pepper
    • 4 ripe tomatoes, diced
    • ¾ pound feta cheese, cubed
    • 2 cups baby arugula
  • How to prepare

    Bring a large pot of salted water to a boil. Cook the pasta according to the package directions. Drain, rinse with cold water, drain again, and toss with 1 tablespoon olive oil. Let cool.

    In a small jar, combine 6 tablespoons olive oil, the lemon juice, garlic, oregano, ½ teaspoon salt, and ½ teaspoon pepper. Shake well to combine.

    In a large bowl, combine the pasta, tomatoes, feta, and dressing. Toss to combine. Can be made ahead to this point and stored in the refrigerator, covered, until serving time. Before serving, stir in the arugula and taste. Add more salt and pepper, if desired.

    • 250 ground chili pepper
    • 150 gr. Grana cheese
    • olive oil
    • garlic
    • salt and pepper
  • How to prepare

    Boil the pasta in salty water.
    Put a splash of olive oil in the pan.
    Add the sliced garlic and let it cook until golden.
    Add the ground chili pepper, stir and pour over the pasta. Serve with Grana cheese on top.

Spaghetti with red sauce, olives and basil


  • Ingredients

    • 250 gr. spaghetti
    • 300 gr. peeled tomatoes
    • a medium size onion
    • 30 ml extravirgin olive oil
    • 40 gr. seedless black olives
    • 40 gr. seedless green olives
    • salt, pepper, chili pepper, garlic powder, bay leaves, sugar
  • How to prepare

    Boil the spaghetti in salty water.
    Saute the finely chopped onion in extravirgin olive oil.
    Add the peeled tomatoes and let it simmer.
    Season to taste.
    Add the sliced olives and a spoonful of sugar, stir and turn off the gas.

  • Ingredients

    • Fusilli – 250gr
    • tomatoes
    • cream
    • cottage cheese
    • butter
    • olive oil
    • cheese (Ricota forte)
    • Vodka
    • basil, chili pepper, salt
  • How to prepare

    It is quite complicated to prepare but, fortunately, you can buy it ready-made.
    Go to the local shop and look for the Pasta D’oro Ricotta a la Vodka jar on the shelf.
    Heat the content of the jar on the cooker or in the microwave.
    You may add some extravirgin olive oil while heating the sauce.

Lasagne corte with white sauce, kaiser and cream


  • Ingredients

    • Lasagne corte (wavy noodles) – 250gr
    • Kaiser – 150gr
    • cream – 200gr
    • Grana cheese – 100gr
    • olive oil, salt, pepper
  • How to prepare

    Boil the pasta in salty water.
    Cut the kaiser into small pieces (1cm) and saute in 30 ml of extravirgin live oil until it reddens.
    Add the pasta and pour the cream, stir for 20 secondswhile still cooking, season to taste and serve with plenty of grana cheese.

  • Ingredients

    • Spaghetti – 250 gr
    • peeled tomatoes – 300 g
    • fresh whole shrimp
    • - 250 gr
    • a medium size onion
    • extravirgin olive oil – 30 ml
    • a glass of white wine
    • salt, pepper, basil, chili pepper,garlic powder, bay leaves, sugar
  • How to prepare

    Boil the pasta in salty water.
    Saute a finely chopped onion in extravirgin olive oil.
    Add the shrimps after rinsing them thoroughly.
    Add a glass of white wine and let it simmer for 5-6 minutes, then mix with the pasta.

  • Ingredients

    • any type of Pasta d’oro pasta
    • tomatoes
    • tomato juice
    • onion
    • olive oil
    • basil, salt
  • How to prepare

    The easiest possible way: you go to the shop, find the shelf with sauces and look for the jar from the picture above. Heat the content of the jar and add olive oil to taste.

Fusilli with white sauce and mascarpone

  • Ingredients

    • Fusilli – 250gr
    • Smoked chicken breast – 200gr
    • Sliced mushrooms – 200gr
    • Green peas – 100gr
    • Mascarpone – 150gr
    • Salt, universal spice mix, pepper
  • How to prepare

    Boil the pasta in salty water.
    Cut the chicken breast into cubes of 1 cm and saute it in 30 gr of extravergin olive oil. Add the sliced mushrooms.
    Add the peas and cook for a little while.
    Season to taste.
    Add the mascarpone, stir until it melts and turn off the heat.

Fusilli with red sauce and tuna


  • Ingredients

    • Fusilli (spirals) – 250gr
    • Peeled tomatoes – 300 gr
    • A medium onion
    • Extravirgin olive oil – 30 ml
    • Seedless black olives – 40gr
    • Seedless green olives – 40gr
    • Tuna flakes drained of oil– 70gr
    • Mascarpone 30gr
    • Salt, Vegeta universal spice mix, pepper, basil, hot chili peppers, granulatd garlic, bay leaf, sugar.
  • How to prepare

    Boil the spirals in salty water.
    Saute a finely chopped onion into extravergin olive oil.
    Add the peeled tomatoes and let it boil.
    Season to taste.
    Add the sliced olives.
    Add the drained tuna.
    Add a spoonful of sugar, stir and turn off the heat.
